This is your EXCLUSIVE opportunity to become a member of the Dry Aging Club at Southern Steer Butcher. Our Dry Aging Club offers you a reserve space in our Himalayan Salt Block Dry Ager.

As part of our Grand Opening celebration, these limited memberships are available for only $100 per month. Each time you place a new order for a loin to be dry aged, your monthly membership fee will be deducted from the cost of the loin. These memberships will increase in cost to $150 per month after July 14, 2024.

Exclusive space in our Dry Ager to be used to hang loins at any time

Loins will be marked with customized aluminum nameplates, displaying your exclusive membership

Members will be invited to exclusive cutting parties where they can select a specific cut for aging

Exclusive discounts on the price of the loin itself – retail dry aged meats are priced at double the retail rate of wet meats; Founding Members only pay 40% above wet meat pricing. Regular members will pay 50% above wet pricing.

After the initial three months, memberships revert to month-to-month plans and can be canceled with 30 days notice.

Members may have their steaks cut and continue the aging process if they want to explore varying timeline of dry aging

SOMMELIER UPGRADE

Have you ever wanted your own personal Sommelier to provide the perfect pairing for that perfect steak? For an additional $75 per month, you can add Sommelier services to your membership!

Each month, our WSET Level 3 Sommelier will select a wine to be paired with your items in the dry ager

The selected bottle of wine is complimentary with your membership

Must be 18 years of age or older to participate in Southern Steer Dry Aging Memberships, and 21 years or older to participate in the Sommelier upgrade to the memberships. Memberships are first come, first serve and are based upon available space in the Dry Ager. Space cannot be held in the Dry Ager without a paid membership. Buyer is responsible for notification of cutting times, aging times, and agreed upon pick-up dates. Memberships have a minimum commitment of three months. Management reserves all rights, including the ability to change or modify the program without notice.
