As your neighborhood butcher, we’re proud to offer the finest dry-aged steaks, a time-honored tradition dating back to the Renaissance period.

Dry-aging breaks down the connective tissue in the meat, producing an incredibly tender cut full of flavor.

You have two option to purchase dry-age steaks at Southern Steer. First, you can either pre-purchase or purchase our “House” steaks. Or, for the ultimate dry ager experience, you can hang an entire loin. You choose the cut, the timing, and the delivery date.

Benefits of Dry Aging at Southern Steer

Choose to pre-purchase individual dry-aged steaks or hang your own loin

If you hang your own loin, your name will be added to the loin with a custom nameplate while in the Dry Ager

If you hang your own loin, you'll receive a discount off retail pricing

If you hang your own loin, you can age it for the length of your choosing, or, even cut on mutliple dates, to sample different durations of aging

As a Southern Steer Butcher Dry-Age purchaser, you may receive special invitations to cut nights or educational opportunities related to dry aging

All dry-aged steaks receive special commemorative wrapping with black butcher paper, red twine, and real red wax seal to show it's exclusivity

Wine Pairing

A great wine pairing for a dry-aged steak balances the meat’s rich, concentrated flavor without overpowering it. Full-bodied red wines with firm tannins and good structure often complement the steak’s depth, enhancing both the savory character of the beef and the overall dining experience.

Our onsite team of Culinary Consultants can help recommend the perfect wine for your steak. Some stores even offer in shop Sommelier services to select that perfect wine for the occasion.
