1.75 lbs Southern Steer chicken thighs plain or marinated
1 cup diced onion
1 cup diced peppers (any color)
1 cup diced tomatoes
1 tsp cumin
½ tsp red pepper flakes
Place the chicken thighs in the slow cooker.
Add the diced onion, diced peppers, diced tomatoes, cumin, and red pepper flakes to the slow cooker.
Cover the slow cooker with the lid.
Cook on LOW for 4-6 hours.
Once cooked, shred the chicken thighs using two forks. They should shred easily.
Serve the chicken fajitas with diced avocado, shredded cheddar cheese, and sour cream.
Optionally, serve with tortillas or over rice.
